Thai Chilli & Lime Cakes with Mango, Avocado & Couscous Salad

Salad

280g packet Vegie Delights Thai Chilli & Lime Cakes
2 cups cooked couscous
½ cup fresh coriander leaves, roughly torn 1 mango, cubed
½ avocado, cubed
2 cups rocket leaves

Dressing

Juice of 1 orange
Juice of ½ a lemon
1 heaped Tbsp hulled tahini
2 tsp maple syrup or coconut nectar

Method

  1. Place a large frying pan over a medium heat and drizzle in a little olive oil. Cook the Vegie Delights Thai Chilli & Lime Cakes from frozen for 7 to 10 mins, turning half way through.
  2. In a large bowl place the couscous, coriander, mango, avocado and rocket and toss in the dressing.
  3. To serve, divide the salad between 4 plates and top with the Vegie Delights Thai Chilli & Lime Cakes.
