Tender Crumbed Schnitzel Wellness Bowl

Ingredients

  • 2 Vegie Delights Tender Crumbed Schnitzel pieces
  • 300g sweet potato, peeled and cut into 3cm chunks
  • 1 cup quinoa, cooked
  • 1 bunch asparagus, trimmed
  • 200g broccoli, rinsed and cut into small florets
  • Sea salt and black pepper

Dressing:

  • 2 tablespoons olive oil
  • 1 tablespoon tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon orange juice

Method

  1. Preheat oven to 180⁰c and line a baking tray with greaseproof paper. Place Vegie Delights Tender Crumbed Schnitzel pieces on tray and place in oven to cook for 10-12 minutes.
  2. While schnitzel is cooking, bring a medium saucepan with steamer basket to the boil, add sweet potato chunks and cook for 5-6 minutes, remove from basket, cover and set aside, then add asparagus and broccoli and cook for 2-3 minutes.
  3. Whilst vegetables and schnitzels are cooking, in a small bowl whisk together all ingredients for the dressing.
  4. Once schnitzels are cooked, slice, then divide veggies and schnitzel pieces between two bowls. Drizzle with dressing, season with sea salt and black pepper and serve.
