Summer Sausage Sandwich with Tomato Chutney and Rocket

Ingredients

1 packet Vegie Delights Thick BBQ Sausage
2 tablespoons vegan mayonnaise
2 teaspoons seeded mustard
1 baguette, cut into 4 pieces and sliced down the middle
1/3 cup (80ml) tomato chutney
1 cup rocket leaves

Method

  1. Heat a frypan or BBQ on high heat and cook Vegie Delights Thick BBQ Sausage for 5 minutes, turning frequently for even cooking.
  2. Whilst sausages are cooking, whisk together vegan mayonnaise and seeded mustard in a small bowl and set aside.
  3. Once sausages are ready, open up the baguettes, spread with mustard mayo, fill with rocket leaves and Vegie Delights Thick BBQ Sausage, top with tomato chutney and serve.
