1 pack of Vegie Delights Meatless Meatballs
1 Tbsp of olive oil
1 onion, finely diced
2 cloves of garlic, crushed
1 ¼ cups of tomato paste
1 cup of vegetable stock
2 large zucchinis, spiralized
1 Tbsp thyme leaves, to garnish
Sea salt and pepper
Optional: Vegan friendly cheese of your choice, grated to garnish
Cook Vegie Delights Meatless Meatballs as per cooking instructions.
Heat oil in a frypan over medium heat, add onion and garlic and cook for 1 min. Mix in tomato paste and stock and bring mixture to the boil. Season with salt and pepper. Add meatless meatballs.
Pour boiling water over zucchini noodles (zoodles), let sit for 1 min, then drain.
Top zoodles with meatless meatballs in tomato sauce and garnish dish with thyme leaves and grated vegan friendly cheese of your choice.
