450g sweet potato, peeled and cut into large chunks
2 bay leaves 1 sprig fresh thyme
400ml water 1 cup parsley, leaves and stalks finely chopped
Sea salt and black pepper
Crunchy green salad and 2 cups cooked quinoa
Heat the oil in a large pan, add the onion, carrot and celery and sweat for 10 minutes until soft.
Add the Vegie Delights Casserole Mince, tomato paste, chopped tomatoes, sweet potato pieces, bay leaves, thyme and water and simmer uncovered on a low heat for 40-45 minutes until the sweet potatoes are tender, stirring a few times throughout cooking to make sure they are cooking evenly.
Once cooked, remove the bay leaves and thyme, stir through the chopped parsley, season with sea salt and black pepper and serve with crunchy green salad and cooked quinoa.
