4 Vegie Delights Gluten Free Mediterranean Koftas
2 teaspoons olive oil
50g baby spinach leaves
200g broccoli florets, cut into small pieces
1/2 cup sauerkraut
1 teaspoon mustard
3 tablespoons extra virgin olive oil
1 teaspoon apple cider vinegar
1 teaspoon maple syrup or coconut nectar
Heat frypan on medium heat, add 2 teaspoons olive oil and cook Vegie Delights Gluten Free Mediterranean Koftas for 7-8 minutes each side.
Make salad by tossing together baby spinach leaves, broccoli florets and sauerkraut.
Whisk all ingredients for dressing in a small bowl and set aside.
Slice cooked koftas into strips.
Serve salad equally between two bowls, drizzle with dressing, place Vegie Delights Gluten Free Mediterranean Koftas pieces on top and enjoy.
