Ginger Spiced BBQ Vegies

Ingredients

  • 1 pack Vegie Delights Thai Chilli & Lime Cakes
  • 150g button mushrooms
  • 1 (300g) red capsicum, cut into 4cm chunks
  • 8 Asian shallots, cleaned and cut in quarters
  • 4 cobs corn, cut in quarters
  • 2 tablespoons olive oil
  • Sea salt and black pepper

SALSA

  • 2 cloves garlic, crushed
  • 2 tablespoons fresh ginger, grated
  • 1/2 teaspoon sesame oil
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 teaspoon tamari
  • 2 teaspoons sesame seeds

TO SERVE

  • 2 cups cooked brown or jasmine rice

Method

  1. Heat large grill plate or BBQ on medium to high heat. Toss button mushrooms, red capsicum, shallots and corn with olive oil and season with sea salt and black pepper.
  2. Cook veggies on grill plate with Vegie Delights Thai Chilli & Lime Cakes for 7-10 minutes, turning veggies 2-3 times and Vegie Delights Thai Chilli & Lime Cakes once.
  3. Whisk ingredients for dressing together in a small bowl.
  4. Serve cooked veggies and Vegie Delights Thai Chilli & Lime Cakes on serving platter, drizzle with ginger tamari dressing and eat with a side of rice.
