Ingredients

  • 300g Vegie Delights Tender Schnitzels, defrosted
  • Olive oil spray
  • 100g low fat ricotta cheese
  • 8 fresh basil leaves
  • 4 slices Vegie Delights Smoked Deli Slices
  • 50g tomato paste
  • 12 baby bocconcini, torn in half

Method

  1. Heat a non stick fry pan over a moderately high heat. Spray the Vegie Delights Tender Schnitzels with olive oil spray and pan fry for 1 ½ minutes each side or until golden.
  2. Preheat grill to high. Place the schnitzels on a baking tray and spread evenly with the ricotta cheese. Top with the fresh basil leaves. Trim each deli slice to fit the schnitzels and place on top of the ricotta and basil. Spread the tomato paste over the deli slices and top with the bocconcini. Grill for 2 minutes or until golden brown. Serve with salad or steamed vegetables.
