Ingredients

  • 1 pack of GF Vegie Delights Mediterranean Koftas
  • Homemade Quinoa or Couscous Salad – see below
  • Homemade Hummus dipping sauce – see below
  • Salt and pepper

Quinoa or Couscous Salad

  • 3 cups of cooked couscous or cooked white quinoa
  • ½ red onion, sliced
  • 1 grilled red capsicum, sliced
  • 2 Tbsp pine nuts, toasted
  • 2 Tbsp parsley, chopped
  • 3 Tbsp extra virgin olive oil
  • Juice of a lemon

Hummus Dipping Sauce

  • 1 can of chickpeas, rinsed
  • 1 cup of water
  • 2 cloves of garlic
  • ¼ cup vegan friendly milk of your choice
  • Salt and pepper

Method

  1. Toss the salad ingredients in a bowl and dress as desired
  2. Blend all hummus ingredients together
  3. Cook Mediterranean Koftas as per cooking instructions
  4. Serve salad and hummus with 2 Mediterranean Koftas
