Glaze

  • 2 tbsp cranberry sauce
  • 1 tbsp maple syrup
  • 1 tbsp apple cider vinegar
  • ¼ cup macadamia or almonds crushed
  • 1 tsp of dried thyme
Roast
  • Vegie Delights Vegie Roast
  • Mix of potatoes, pumpkin and carrot
  • 2 onions cut into thick rings
  • Sprigs of fresh rosemary
  • Vegetable oil
  • Your choice of gravy
  • Preheat oven to 180°C
  • Prepare vegetables and place in an oiled baking tray – add sprigs of rosemary
  • Combine glaze ingredients into small bowl until a paste is formed
  • Grease baking dish. Coat roast with glaze and turn to ensure even cover. Place roast on top of onion rings.
  • Bake vegetables for approx. 20-25mins
  • Add roast to the partly baked vegetables and continue cooking for a further 25-30mins
  • Serve with your choice of gravy
