Glaze
- 2 tbsp cranberry sauce
- 1 tbsp maple syrup
- 1 tbsp apple cider vinegar
- ¼ cup macadamia or almonds crushed
- 1 tsp of dried thyme
- Vegie Delights Vegie Roast
- Mix of potatoes, pumpkin and carrot
- 2 onions cut into thick rings
- Sprigs of fresh rosemary
- Vegetable oil
- Your choice of gravy
- Preheat oven to 180°C
- Prepare vegetables and place in an oiled baking tray – add sprigs of rosemary
- Combine glaze ingredients into small bowl until a paste is formed
- Grease baking dish. Coat roast with glaze and turn to ensure even cover. Place roast on top of onion rings.
- Bake vegetables for approx. 20-25mins
- Add roast to the partly baked vegetables and continue cooking for a further 25-30mins
- Serve with your choice of gravy
