Bahn Mi with Vegie Delights Crispy Chik’n Style Tenders
- 8 soft small long rolls
- 4 Tbsp mayonnaise
- Crisp lettuce
- Fresh mint leaves
- Fresh coriander leaves
- 1 x packet Vegie Delights Crispy Chik’n Tenders.
1. Make up Pickled Carrot & Radish (see recipe below)
2. Cook tenders following pack cooking instructions.
3. To assemble: Heat rolls until crusty and warm. Split rolls down the middle and spread base with mayonnaise. Place in lettuce and a few leaves of mint and coriander. Slide in a tender and top with the pickled carrot and radish. Serve.
PICKLED CARROT & RADISH
¼ cup water
½ cup vinegar
1-2 tsp salt
3 tsp sugar
1 carrot – peeled and julienne shredded
4 red radish – washed and finely sliced
1. Place in a bowl the water, vinegar, salt and sugar. Stir to dissolve.
2. Add carrot and radish to the vinegar mix and stir. Leave to stand 30 minutes before using.
